The following ingredients are for 6 portions of mousse. Do not substitute cream cheese for the mascarpone.
9 oz (250g) mascarpone cheese
1/2 cup heavy whipping cream
2 tbsp powdered Erythritol
2 oz (55g) dark chocolate
This delicious and rich dessert comes together very fast. If you are using a different sweetener to Eythritol make sure to taste as you go.
Makes 6 servings
1 Melt 2 oz (55g) of dark chocolate gently in a pan or in the microwave. Take care to not burn the chocolate
2 Add the melted chocolate to 9 oz (250g) of mascarpone cheese.
3 Mix well.
4 Add 2 tbsp of powdered Erythritol. Mix well.
5 Using an electric whisk, whip 1/2 cup of heavy cream until soft peaks form. Fold in gently into the mascarpone mixture.
6 Divide the mousse into 6 portions. Store in the fridge.
