Keto Pulled Pork: with Roasted Peppers, Avocado and Sour Cream

The following ingredients make four portions of pulled pork and fajita peppers. If you want to turn these into burritos, buy low carb wraps.

400g (14oz) pulled pork

1 onion (about half needed)

400g (14oz) peppers

100g (3.5oz) tomatoes


1 avocado

Lime/lemon/chili/fresh coriander (optional)

Sour cream (4 tbsp needed for recipe)

Olive oil (4 tbsp needed for recipe)

Salt & pepper

Smoked paprika


Dried oregano

Chili or hot sauce


What makes this recipe fantastic is that you can buy high quality pulled pork that is ready to go instead of preparing it yourself. The recipe doesn't call for chili flakes, however, feel free to add them to suit your taste.

Keep the pulled pork veg mixture in the fridge for up to 4 days, or freeze into portions.

Suggestion: Use a low carb wrap to turn these into keto burritos, which can be frozen individually in foil.

  • Instructions

    Makes 4 portions

     Spice mix

    1 Make a spice mix consisting of:
    1/2 tsp pepper
    1 tsp salt
    2 tsp smoked paprika
    2 tsp cumin
    2 tsp dried oregano

     Baking tray with veg

    2 Slice 400g (14oz) of peppers, 100g (3.5oz) onion and 2 cloves of garlic.

    3 Place on a lined baking tray and add 100g (3.5oz) tomatoes.

    4 Add 4 tbsp of olive oil and half of the spice mix. Mix well together.

    5 Cook for 15-20 minutes in a 180c (350f) oven.

    6 Add rest of the spice mix to 400g (14oz) of pulled pork.

    7 Add chili to taste.

    8 Add the cooked peppers, onion and tomatoes.

    9 Mix well.

    1 tsp sour cream
