Vegetarian Keto Quiche: Feta & Sundried Tomato

3 large eggs

1 cup heavy cream

50g (2.5oz) fresh chard or spinach

Salt

100g (3.5oz) feta cheees

40g (1.5oz) sundried tomatoes

Instructions

This dish comes together very fast and requires very little prep. The only thing to note is to allow the quiche to cool completely in the fridge before serving.

You can use a silicone muffin mold to make small individual quiches. This dish freezes also well so feel free to double the ingredients.

This dish pairs well with a side salad, roasted or steamed vegetables. This will increase the amount of nutrients without increasing the amount of calories substancially.

Equipment

  • Bowl
  • Non-stick parchement paper
  • Baking dish (8 inch x 8 inch)
  • Scale
  • Chopping board & knife
  • Containers for storage
  • Instructions

    Makes 4 portions

      Bowl with eggs and cream

    1 Crack 3 eggs into a large bowl.

    2 Add 1 cup of heavy cream.

    3 Add 1/2 tsp salt.

    4 Mix well using a whisk or fork.


     Sliced greens in a pan

    5 Slice 50g (2oz) of fresh spinach or chard into smaller pieces.

    6 Sautee or steam until just wilted.

    7 Add the cooked greens, 100g (3.5oz) of crumbled feta and 40g (1.5oz) of sundried tomatoes into a small lined baking dish.

    8 Add the egg mixture.

    9 Cook for 15-20 minutes in a 350f preheated oven until browned and set.

    10 Allow to cool completely in the fridge before cutting into four portions.
    Store in the fridge or freezer.
